Lemon, Mint & White Bean Dip



Ingredients

  • 1 clove garlic

  • 1 (15-ounce) can no-salt-added cannellini beans, rinsed

  • 2 tablespoons chopped fresh mint

  • 1 teaspoon lemon zest

  • 1 tablespoon fresh lemon juice

  • 1 tablespoon extra-virgin olive oil

  • 1/4 teaspoon salt

  • 1/4 teaspoon freshly ground black pepper

  • 50 baby carrots

Directions

  1. Drop garlic through chute with food processor on; process until minced. Add beans, mint, zest, lemon juice, olive oil, salt and pepper; process until smooth. Cover and chill until ready to serve. Serve with carrots.
