Oven Roasted Sweet Potatoes
These easy, roasted sweet potatoes are easy to cook all season long. They use pantry staples, and most of the cooking is done by hand. While they roast in the oven, you can finish your other dishes. They’re delicious with meat and veggies, in grain bowls with runny eggs, with roasted vegetables and sausages, or even mixed into breakfast with your favorite eggs. Material
- Sweet Potatoes: Peel four medium sweet potatoes.
- olive oil To toss the potatoes, I use extra virgin olive oil. Avocado oil will also work.
- Spices: Garlic powder and sweet paprika to taste.
- Herb: Dried rosemary or Italian seasoning adds flavor.
- Kosher salt and pepper to taste
How to Roast Sweet Potatoes
- Preparation: Preheat oven to 425°F and lightly oil a baking sheet. You can also cover it with foil to reduce cleanup.

- Seasonal Sweet Potatoes: Toss the potatoes with olive oil and season with all the herbs and spices. Spread the mixture in an even layer on the sheet pan.

- Heat oven to 425°F. Lightly spray a sheet pan with oil.
