I love Raw Shaved Brussels Sprout Salad and have been making it since Madison was little. She loves them! Last year, I shared this Fall Brussels Salad with Apples, but lately, I’ve been loving this version of pears with pomegranate seeds. The perfect fall side dish to enjoy with your favorite protein. The colors are gorgeous, the pepitas give it the perfect crunch, and the goat cheese (or feta cheese) adds creaminess. Shaved Brussels Sprouts Salad with Pears, Pomegranate and Pepitas

  • Easy: If you buy pre-made pomegranate seeds and Brussels sprouts, all you have to do is whip up the vinaigrette, chop the pears and put everything in a bowl.

what you’ll need

  • Brussels Sprout Salad Dressing: Olive oil, minced onion, Dijon mustard, apple cider vinegar
  • Brussels Sprouts: Finely chop 12 ounces Brussels sprouts.
  • salt and pepper To season the sprouts and vinaigrette
  • Pear: Core and chop a large, ripe red pear.
  • pomegranate seeds: You can seed a whole pomegranate yourself or purchase a cup of the seeds from your supermarket.
  • Nuggets: Toast 1/4 cup pepitas.
  • Cheese: Use feta or goat cheese.

How to Shave Brussels Sprouts

You can buy pre-cut Brussels sprouts from the supermarket, but I prefer to prepare them myself so they stay fresh.

  1. First, cut off the root tip of each seedling, and then do one of the two methods below:
  2. Cut the Brussels sprouts in half and then slice them vertically.
  3. Use the slicing disc on a food processor to chop the sprouts, or use a sharp knife to halve them and then thinly slice them by hand.

How to Make Shaved Brussels Sprout Salad

  1. Vinaigrette: In a small bowl combine the olive oil, Dijon, shallots and vinegar with a pinch of salt and pepper.
  2. Brussels Sprouts: Pour dressing over shaved Brussels sprouts in a mixing bowl and season with 1/4 teaspoon salt and pepper to taste. Toss well and transfer to a large salad bowl.
  3. Assemble the Salad: Top sprouts with pears, pomegranate, pepitas and goat cheese.

  • Pear: Replace red pears with Bartlett or Bosque pears or apples, such as Pink Lady or Honeycrisp.
  • Pomegranate: Use dried cranberries or dates instead.
  • Nuggets: Use toasted pecans or walnuts.

This easy Brussels sprout salad will pair perfectly with any protein, like baked salmon, roasted chicken, or honey mustard air fryer pork chops and a starchy side dish like roasted potatoes, brown rice, or quinoa.

Meal Prep How to Make Shaved Brussels Sprout Salad

If you’re serving this at a party or holiday, do these three things a day or two in advance:

  1. Shred Brussels Sprouts
  2. remove pomegranate seeds
  3. make vinaigrette

On the day of your event, assemble the salad a few hours in advance, but wait to chop the pears until just before serving. This hearty salad will keep in the refrigerator for up to two days.
